Meta Minute, Jan. 27

The star-struck awe was evident in the Lower School student’s eyes as they watched and listened to the blender grind and “whirr” away —mixing up blueberries, spinach, avocado, hemp seeds, chia seeds and more! “Wow! That looks GOOOOOD!” A couple were skeptical –they saw the dark green spinach drop into the blender. Could it really taste good? “Yes! We put a little honey in it. That’ll help!” The back and forth banter was hilarious.

I like to think of smoothies as a great vessel to transport lots of nutrient-dense foods into our bodies–and in a quick and easy fashion! This Blueberry Blaster smoothie, as named by the students, packs quite a punch complete with protein, and healthy fats and carbs. Play around with it and mix up the spinach for kale. Add ground flax seed. Too sweet? Reduce or omit the honey. Don’t like honey? Try a half a banana or a couple of dates as your sweetener. Be curious. Be creative. And have fun!
